Dry Ingredients
1 1/2 C. whole wheat flour
1 t. baking powder
1/4 t. salt
1/2 t. ground cinnamon
1/4 t. ground nugmeg
1/8 t. ground ginger
1/8 t. ground allspice
Wet Ingredients
1/3 C. honey
1 egg
1/2 C. sour milk or yogurt - water also works.
1/3 C. oil or melted butter
1/2 t. vanilla
1 1/2 C. grated carrots
1/2 C. raisins
Measure dry ingredients in a big bowl. Mix wet ingredients in another bowl with carrots, and raisins. Add to dry mix, stirring only until flour is moistened. Place in greased muffin tins and bake for 15 minutes at 400 degrees. They are delicious, moist muffins. Enjoy them at breakfast or anytime. This recipe makes 16-18 muffins.
